Let me tell you how Georgie changed my life. I am inspired by the art and science of sourdough and for the last year I have read nearly every book and visited every internet site dedicated to sourdough. I purchased all the suggested equipment, from a Brod&Taylor proofer to hand made lames and imported bannetons. But my bread just wasn't right: crust soft, crumb gummy. Sometimes too much knowledge can lead to over tweaking and... over hydration. I reached a point where I thought sourdough wasn't for me, threw out my starter, and concentrated on making yeasted bread... but the bread was tasteless. I have been making sourdough for a while but never quit achieved the rise and ear and crumb combined that I wanted. I used Georgie's technique (stretch and fold) and followed the video that has excellent demonstrations of all the techniques and signs to look for as you work through the process. The handbook and recipe reinforce all the main points. Great result from the first attempt. Will try the slap and knead if I can find the energy! Just wish I had seen this course when I started making sourdough as even for a beginner its is so clear and the video demos are spot on. Excellent course Georgie.

My name is Georgie. I'm a passionate home baker and my true love is sourdough. I became a bit obsessive about taming the sourdough beast after the birth of my first baby, Magnolia. Since then, I've baked thousands of sourdough loaves for my local community in West Gippsland (Australia) and have taught hundreds of people the timeless and joyful craft of sourdough breadmaking. Over the years I've gone down all the rabbit holes and have come back up the other side with a pared-back process that works, and I hope to share it with you.
